Mmmm, Mmmm!

What could be yummier on a chilly evening than a steaming bowl of Butternut squash soup? I used a recipe a friend emailed to me a long time ago, and the results were delicious, perfect comfort food. Enjoyed by one and all. So I thought I'd share it:

Serves 6-8


1 butternut squash, peeled
2 tablespoons unsalted butter
1 medium onion, chopped
6-8 cups veggie or chicken stock
Salt and pepper to taste


Cut squash into 1-inch chunks. (I softened it in the microwave before peeling and cutting)

- In a large pot, melt butter.
- Add onion and cook until translucent, approximately 8 minutes.
- Add squash and stock.
- Bring to boil and cook until squash is tender, about 20 minutes.
-Use a wand blender or food processor to puree to your desired consistency
- Stir and season with nutmeg, salt and pepper.

This is great with bread dipped in it. Zakir added some paprika for a little flavor enhancement too.
